Game Day Snacks: Sweet Sesame Cauliflower Bites

Well folks, it’s that time again! The Detroit Lions are back and that means that our Sunday afternoons are booked for the rest of the season. I’m not gonna lie, I don’t really care too much for football, but it’s fun to get together with friends and family to eat, drink and be merry (as long as our team wins, of course).

Justin takes football very seriously so when him and his buddies are cooped up in the basement hootin and a’hollerin, I like to make sure that they have enough energy to get them through the game. So I have come up with a few game day snacks that are yummy and that have pretty clean ingredients.

Game Day Sweet Sesame Cauliflower Bites

A take on sesame chicken wings, these Sweet Sesame Cauliflower Bites are sweet and a little savory. I was surprised to find out that the boys (or should I say men) scarfed these bites down before the second half! If you can get a guy to eat his cauliflower, you’re doing something right!

Anyway, these are great if you are on a Whole30 and are heading to a tailgate party, or if you are hosting and you want to give your guests a lighter option that is NOT lacking on flavor.

This recipe is very easy and takes under an hour to put together. Whether you are serving this as an app at a tailgate, or your just having them on the side with your dinner, you can’t go wrong.

Sweet Sesame Cauliflower Bites

These cauliflower bites make for a perfect game-day snack that is guilt-free and pretty easy to whip up!

Ingredients

  • 1/4 cup coconut aminos
  • 1 head cauliflower
  • 2 tbsp extra virgin olive oil
  • 1 tsp salt
  • 1 tbsp minced ginger or 2 tsp ginger powder
  • 2 cloves garlic minced
  • 2 tbsp apple cider vinegar
  • 2 tbsp sesame seeds
  • 1 green onion

Instructions

  1. Preheat the oven to 425. Break up the head of cauliflower into bite-size pieces. On a sheet pan covered with parchment paper, lay out the cauliflower and drizzle olive oil and add salt. Mix the cauliflower and olive oil to get incorporated. Put in the oven for 30 min or until cauliflower is lightly browned. 

  2. While the cauliflower is cooking, put coconut aminos, apple cider vinegar, ginger, garlic and 1 tbsp of sesame seeds into a small sauce pot. On medium heat, bring mixture to a boil, then turn down to a low heat and let simmer. This sauce should thicken. Once thickened to a glaze, take off stove.

  3. Once the cauliflower is lightly browned, take out of the oven and transfer into a mixing bowl. Pour the sauce over the cauliflower and mix the cauliflower is covered with the sauce. Put cauliflower back on the sheet pan and place in the oven at 450 for another 5 minutes. 

  4. Allow to cool for 5 minutes, sprinkle the rest of the sesame seeds, and top with green onion. Serve with tooth picks for ease of eating. Enjoy!
